Vooraf: Coquilles geflambeerd met pastis
Een snel en simpel te maken gerecht, alhoewel ik het flamberen eng blijf vinden.
Bak per persoon 3 coquilles (royaal bestrooid met peper) in roomboter ongeveer 3 minuten per kant. Voeg dan Pastis toe (wij hadden 50 ml voor 6 coquilles) en flambeer de coquilles (denk aan afzuigkap). Als de vlam kleiner wordt, doof hem dan. Neem de coquilles uit de pan en houd warm. Roer 3 tot 4 el creme fraiche door het braadvocht en laat pruttelen tot de saus dikker wordt. Garneer met bosui ringetjes.

De ganzenbout heb ik gewoon gebraden op het gasfornuis (ongeveer 1 1/2 uur). De smaak was echt een wildsmaak en het vlees was stevig.
Snijd de venkel in plakken en leg ze in een ovenschaal. Leg er 1 teentje knoflook in plakjes op en een paar klontjes boter. Schenk er dan 2 wijnglazen vermouth over. Neem een stuk bakpapier, maak dit nat onder de kraan en verfrommel het. Dek hier de ovenschaal mee af. Op deze manier droogt de venkel niet uit. (tip van Jamie) Bak de venkel op 200 grC in de oven voor ongeveer een half uur.
Nagerecht: Bakje van ontbijtkoek gevuld met peer (hoe kan het ook anders), vijg en blauw schimmelkaas
Snijd 2 dikke plakken ontbijtkoek af en rol die met de deegroller uit tot een platte plak. Vet 2 muffinholtes in en leg de ontbijtkoek in de holtes. Bak de koek 5 minuten in de oven op 200 grC. Laat afkoelen en je hebt een bakje. Vlak voor opdienen vul je het bakje met een mengsel van in blokjes gesneden peer, vijg en kaas. Strooi en nog wat rucolacress (tuinkers kan ook) over. En vergeet niet een glaasje dessertwijn erbij te drinken.
